The pinot noir grapes are harvested in the beginning of September, and they are crushed and pressed immediately (champenoise noir method). The basic wine is brought to second fermentation in the bottle. Then, it is kept on the natural yeast for another 18 months. The dosage is pinot blanc from 2002 to give an extra winy character to the product. |
