After the harvest, the selected grapes go into the destemming then press, followed by vinification in stainless steel tanks. For the first 24-36 hours, the fermentation is open-tank. The wine is then transferred into other stainless steel tanks and left there for six months. At this point, the wine is ready for bottling, where it will age for an additional 6 months before being released. |
