Vinification & Aging: |
The grapes are harvested between the last week of September and the first of October. They are hand-picked and kept at a temperature-controlled level of 30.2° – 32° F (cryoconservation). Then, the grapes go for pressing with dry ice and sent for maceration over the skins for 7 days. The fermentation process takes place in stainless steel tanks at a controlled temperature of 68-71° F. During fermentation the must is separated from the skins and these go for pressing. At the end of the fermentation process, the wine is aged in stainless steel tanks at a controlled temperature of 57-59° F for 6 months. Then, the wine is bottled and aged for an additional 3-to-4-month period prior to its release. |

Description: |
Light-rosé-like color, typical of the Grignolino variety. To the nose, the wine presents an intense bouquet of fruits and flowers, especially roses. Its scent is the element that makes this wine fresh and dry to the palate. Its full body distinguishes it from any other common rosé. |
