Vinification & Aging: |
The grapes were harvested on September 20th from30-35 year old vines. They underwent a long and soft pressing, without detemming. The must was transferred to temperature controlled stainless steel autoclaves, which stopped fermentation. After decanting and racking, the clean must was fermented with champagne yeasts, without oxygen. This delicate and natural vinification is carried out entirely without oxygen, which allows the wine to retain more of the flavors and aromas of the Arneis grapes. The wine is bottled in the spring. |

Description: |
Extremely elegant wine, its color, with its slight suggestion of straw-yellow, forebodes a very peculiar scent of wild flowers and fruits such as pears, pineapples, passion-fruits. The same sensations recur in the mouth, magnified by a long-lasting, full and harmonious taste. This wine has great potential for aging. |

Very versatile wine: it can go with starters, first courses, white meat and, obviously, with fish: seafood and shellfish exalt its harmony, elegance and full taste. |
