Vinification & Aging: Fermented in stainless steel and fiberglass tanks. The cap was punched down twice a day for a period of 7-10 days. The wine aged 8 months in stainless steel tanks, during which time it was frequently racked to soften and develop the bouquet. The wine is then aged for 1 month in bottle prior to release.
