The fermentation takes place in stainless steel tanks, with frequent break up of the cap and a maceration lasting around 3-4 days at a controlled temperature. After the malolactic fermentation, the wine is racked into large oak casks, where it matures for 4-6 months. It is then bottled without undergoing any filtration. After bottling, the wine stands in the cellar for 6 additional months prior to its release. |
