Vinification & Aging: |
The grape stalks are removed before pressing and the pressed grapes are transferred to stainless steel horizontal containers and kept for about 7 days at a controlled temperature. In order to extract the color and primary aroma, the wine is pumped over for 10 minutes at hourly intervals. Fermentation is interrupted by cooling and filtering. The must is stored at 32° F until second fermentation takes place in air tight tanks to reach the appropriate alcohol content and obtain a fragrant effervescence. |
