Vinification & Aging: |
The grapes were harvested from the 35-40 year old vines at the beginning of September. Fermentation and a maceration period of 18 days was done in stainless steel tanks under temperature control with natural yeasts. The wine then went through the malolactic fermentation in French oak barrels and remained for three months and was then moved to stainless steel for an additional 9 months aging in stainless steel tanks. |
