Vinification & Aging: |
The vines are cultivated in a traditional system. The grapes were harvested by hand at the end of August/beginning of September. Fermentation in steel tanks under temperature control, with natural yeasts. The maceration period lasted 27 days. Aging took place in French oak barrels for 15 months and was bottled on January 10, 2004 and then aged an additional 3-4 months in the bottle prior to release. |
