After the natural cultivation of the vines harvest, the grapes come to the cellar where they are pressed in stainless steel tanks. Then they are transferred into a temperature regulator to drop the temperature of the grapes down to 50˚F. The grapes are softly pressed again at low pressure. Then, the must is pumped into another tank where it rests for 24 hours at a low temperature. The following day the residuals are removed and the fermentation can start with a clean must. Periodically, the must is pumped again to eliminate residuals on the bottom of barrels and tanks. The wine is then racked for aging: 1 year in barrels and 6 months in bottle prior to its release. |

Description: |
The color is straw yellow with green reflections. Aromas of unripe pineapple, cantaloupe. The taste is full, freshly aromatic, with a citrus aftertaste and with a good acid balance. |
