The Nero d’Avola is manually harvested in late August, when the grapes are fully mature and have a good acidity level and a percentage of sugars that is not too high. Fermentation takes place with the skins for 30 days in open oak vats, without sulfur or foreign yeasts. The wine is aged for 12 months in large French oak barrels. |
