The grapes are hand harvested in September with several passages to select the slightly over-ripened grapes. In the cellar the grapes are gently pressed and fermentation takes place at low temperature for 3 – 4 weeks. The wine is aged in cement tanks “sur lies” (on yeasts) for 6 months. |
