Vinification & Aging: |
The grapes harvested in mid-October were put in baskets in a dehumidified room for five months. At the end of February, the wine went through the fermentation process in stainless steel tanks for a period of 40 days. Once the wine reached 13% alcohol level, fermentation had to be stopped by cooling the tanks and not re-fermenting the sugar. After this, the wine goes into the aging process in small French barrels for a year and, then, in the bottles for six months. |
